Creamy Steak Pasta Easy Dinner

Ingredients
  

  • 1 pound sirloin steak, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 pound pasta fettuccine or penne
  • Salt for pasta water
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ½ cup beef broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley optional, for garnish

Instructions
 

  • In a bowl, toss the steak pieces with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.
  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package directions until al dente.
  • Reserve about 1 cup of pasta water before draining.
  • Drain the pasta and set aside.
  • Heat a large skillet over medium-high heat.
  • Add the steak to the hot skillet in a single layer (you may need to do this in batches).
  • Sear for 2-3 minutes per side, or until nicely browned and cooked to your desired doneness. Remember, it will continue to cook a bit in the sauce.
  • Remove the steak from the skillet and set aside.
  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and cook for about 30 seconds, or until fragrant. Be careful not to burn the garlic!
  • Pour in the beef broth and scrape up any browned bits from the bottom of the skillet. This adds tons of flavor!
  • Bring the broth to a simmer and then stir in the heavy cream.
  • Reduce the heat to low and simmer for 2-3 minutes, or until the sauce has thickened slightly.
  • Stir in the Parmesan cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Add the cooked pasta to the skillet with the creamy sauce. Toss to coat evenly.
  • Add the seared steak to the pasta and sauce. Toss gently to combine.
  • If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  • Garnish with fresh parsley (if using).

Notes

For a more tender steak, pat it dry before searing and don't overcrowd the pan. Sautéing sliced mushrooms, onions, or bell peppers before adding the garlic to the sauce is a great way to add veggies. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of milk or broth if needed.
