Instructions

  • Prepare the salad base: In a very large bowl, place the shredded iceberg lettuce. Set aside. Prepare the other salad ingredients by slicing the salami, pepperoni, ham, and provolone cheese into thin, bite-sized strips or ribbons. Halve the cherry tomatoes, and thinly slice the red onion, banana peppers, and black olives.
  • Whisk the creamy zesty vinaigrette: In a separate, smaller bowl, combine the mayonnaise, red wine vinegar, Italian seasoning, garlic powder, salt, and black pepper. Whisk until the mixture is smooth and creamy. Taste and adjust seasoning if necessary.
  • Marinate the toppings: To the large bowl (before adding the lettuce), add the sliced meats, provolone cheese, red onion, cherry tomatoes, olives, and banana peppers. Pour about two-thirds of the creamy dressing over this mixture.
  • Toss and marinate: Gently toss the toppings with the dressing until everything is lightly coated. Let the mixture sit for at least 5-10 minutes to allow the flavors to meld and deepen.
  • Assemble and serve: Add the reserved shredded iceberg lettuce to the bowl with the marinated toppings. Pour the remaining dressing over the top. Toss everything together gently until the lettuce is evenly coated but still crisp. Serve immediately to ensure maximum crunch.

Notes

To ensure the best texture, do not dress the lettuce until you are ready to serve. For meal prep, store the shredded lettuce separately from the marinated toppings and combine just before eating. The homemade dressing is key; avoid bottled versions which can contain hidden sugars. Don't skip the marination step, as it infuses the toppings with flavor. For variations, try adding toasted pine nuts, chopped artichoke hearts, or fresh parsley and basil just before serving.
