Ingredients
  

  • 1 pound pasta spaghetti or fettuccine
  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of red pepper flakes optional
  • Squeeze of lemon juice optional
  • Fresh parsley, chopped optional for garnish

Instructions
 

  • Bring a large pot of salted water to a rolling boil.
  • Add the pasta and cook according to package directions until al dente.
  • Before draining, reserve about 1/2 cup of pasta water.
  • Drain the pasta and set aside.
  • While the pasta is cooking, melt the butter in a large skillet over medium heat.
  • Add the minced garlic and cook for about 1-2 minutes, or until fragrant, being careful not to burn it.
  • Pour in the heavy cream and bring to a simmer.
  • Reduce the heat to low and stir in the Parmesan cheese.
  • Stir until the cheese is melted and the sauce is smooth.
  • Season with salt, pepper, and red pepper flakes (if using).
  • If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  • Add the drained pasta to the skillet with the sauce.
  • Toss to coat the pasta evenly with the sauce.
  • If the sauce seems too thick at this point, add a little more pasta water until it's perfectly creamy.
  • Squeeze a little lemon juice into the pasta. Stir gently to combine.
  • Serve immediately, garnished with fresh parsley (if using).

Notes

To prevent the sauce from becoming too thick, add pasta water gradually. If the sauce is too thin, simmer for a few minutes to thicken. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of milk or cream to prevent drying. Variations: add grilled chicken, shrimp, or vegetables like sautéed mushrooms or spinach. For a spicier dish, add more red pepper flakes or a dash of hot sauce.
