Ingredients
  

  • 1 pound steak sirloin, ribeye, or New York strip
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 pound pasta fettuccine, linguine, or penne
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese, plus more for serving
  • ¼ cup chopped fresh parsley, for garnish
  • Red pepper flakes optional

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package directions until al dente.
  • Reserve about 1 cup of pasta water before draining.
  • Drain the pasta and set aside.
  • Heat the olive oil in a large skillet over medium-high heat until shimmering.
  • Carefully place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, or longer for your desired level of doneness.
  • Use a meat thermometer to ensure the steak is cooked to your liking.
  • Remove the steak from the skillet and let it rest for at least 5 minutes before slicing against the grain.
  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and cook for about 1 minute, or until fragrant.
  • Pour in the heavy cream and bring to a simmer, stirring occasionally.
  • Reduce the heat to low and stir in the Parmesan cheese until melted and smooth.
  • Season with salt, pepper, and red pepper flakes (if using).
  • If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  • Add the cooked pasta to the skillet with the creamy garlic parmesan sauce and toss to coat.
  • Add a little more pasta water if needed to achieve the perfect creaminess.
  • Gently stir in the sliced steak.
  • Serve immediately, garnished with fresh parsley and extra Parmesan cheese.

Notes

For a thicker sauce, simmer for a few more minutes or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water). To lighten the sauce, use half-and-half instead of heavy cream. You can also add vegetables like mushrooms, onions, or spinach to the sauce. Steak can be substituted with chicken, shrimp, or sausage.
