Ingredients
  

  • 2 lbs boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch dressing mix
  • ½ cup cooked and crumbled bacon (about 6–8 slices)
  • 1 cup shredded cheddar cheese
  • Optional: chopped green onions for garnish

Instructions
 

  • Lightly grease your slow cooker or use a liner for easy cleanup.
  • Place the chicken breasts in the bottom of the slow cooker.
  • Place the cream cheese on top of the chicken. Sprinkle the ranch dressing mix over everything.
  • Cover and cook on low for 6–8 hours or high for 3–4 hours, until chicken is fully cooked and shreds easily.
  • Shred the cooked chicken using two forks directly in the crockpot.
  • Stir in the cooked bacon and shredded cheddar cheese.
  • Cover again and cook for 30 more minutes until the cheese is melted and bubbly.
  • Garnish with green onions, if desired. Serve hot.

Notes

Try it spicy with cayenne or jalapeño. Swap cream cheese with Neufchâtel for a lighter version. Serve over potatoes, pasta, or in wraps. Leftovers store well and are even tastier the next day!
