Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper optional
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp dried thyme
  • ½ tsp red pepper flakes or more, to taste
  • 1 tbsp lemon juice
  • ¼ cup grated Parmesan cheese

Instructions
 

  • In a large bowl, toss the chicken cubes with olive oil, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Make sure the chicken is evenly coated.
  • For even more flavor, let the chicken marinate for at least 30 minutes in the refrigerator (optional).
  • Heat a large skillet over medium-high heat. Add the chicken in a single layer, being careful not to overcrowd the pan. If necessary, cook in batches.
  • Cook the chicken for about 5-7 minutes, turning occasionally, until it's cooked through and golden brown on all sides. The internal temperature should reach 165°F (74°C). Use a meat thermometer to ensure it's fully cooked.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to burn the garlic.
  • Stir in the parsley, chives, thyme, and red pepper flakes. Cook for another minute to allow the flavors to meld.
  • Remove the skillet from the heat and stir in the lemon juice and Parmesan cheese. Season with salt and pepper to taste.
  • Add the cooked chicken back to the skillet with the cowboy butter. Toss to coat the chicken evenly in the delicious sauce.
  • Serve the Cowboy Butter Chicken Bites immediately, garnished with extra parsley or chives, if desired. These are best enjoyed hot!

Notes

Don't overcrowd the pan when cooking the chicken. Fresh herbs are best for the cowboy butter. Adjust the spice level by adding more or less red pepper flakes. Lemon juice is key to balancing the flavors. Grate your own Parmesan for a creamier sauce. You can prepare the cowboy butter ahead of time and store it in the refrigerator for up to 3 days. Store leftover chicken bites in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
