Ingredients
  

  • 1 lb ground pork (80/20 blend)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp ground sage
  • 0.5 tsp thyme
  • 0.25 tsp crushed red pepper flakes
  • Pinch of nutmeg
  • 1 tsp brown sugar (optional)
  • 1 tsp maple syrup (optional)

Instructions
 

  • Place ground pork in a large bowl. Add salt, pepper, sage, thyme, crushed red pepper, and nutmeg. Mix by hand until just combined — don’t overwork it.
  • Divide into 8 equal portions. Roll into balls, then flatten into patties about ½ inch thick.
  • Heat a skillet over medium heat. No oil needed — the pork will release its own fat.
  • Fry patties 3–4 minutes per side until golden brown and cooked through (160°F internal temperature).
  • Drain on paper towels. Serve with eggs, biscuits, or in a sandwich.

Notes

Customize with maple syrup for a sweet twist or brown sugar for subtle caramel notes. Ground turkey or chicken also works — just add a bit of oil. Great for make-ahead breakfast meal prep!
