Ingredients
  

  • ½ cup granulated sugar
  • ½ cup water
  • ½ cup fresh lemon juice about 3-4 lemons
  • 2 cups vanilla ice cream
  • Lemon wedge or zest for garnish optional

  • Make the Simple Syrup: In a small saucepan, combine sugar and water.
  • Heat and Dissolve: Place the saucepan over medium heat and stir until the sugar is completely dissolved. The mixture should be clear and smooth.
  • Cool Completely: Remove the simple syrup from the heat and let it cool completely. You can speed this up by placing it in the refrigerator.
  • Juice the Lemons: Squeeze the lemons to get about ½ cup of fresh lemon juice.
  • Combine Ingredients: In a blender, combine the cooled simple syrup, fresh lemon juice, and vanilla ice cream.
  • Blend Until Smooth: Blend on medium speed until everything is smooth and creamy. Be careful not to over-blend.
  • Adjust Consistency (if needed): If the Frosted Lemonade is too thick, add a splash of water or lemon juice to thin it out. If it's too thin, add a scoop of ice cream to thicken it.
  • Taste and Adjust Sweetness: Taste and adjust the sweetness or tartness to your liking. Add more simple syrup for sweetness or more lemon juice for tartness.
  • Serve Immediately: Pour the Frosted Lemonade into glasses and serve immediately. Garnish with a lemon wedge or a sprinkle of lemon zest, if desired.

Notes

For the best flavor, use high-quality vanilla ice cream and freshly squeezed lemon juice. Don't over-blend the mixture, as this can cause the ice cream to melt too much. If you want a thicker consistency, freeze the blended lemonade for 30 minutes before serving. To store leftovers, freeze for up to a week, then blend again after slightly thawing to restore creaminess. For an extra refreshing treat, chill your glasses before serving. You can also experiment with different citrus fruits like lime or orange.
