Equipment

  • Cast iron skillet or heavy skillet
  • Medium mixing bowl
  • Saucepan with lid
  • Chef's knife
  • Cutting board
  • Fine-mesh strainer
  • Measuring cups and spoons
  • Tongs or spatula

Ingredients

  • 1.5 lbs flank or skirt steak, sliced across the grain into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups water
  • 2 large limes, juiced plus extra for serving
  • ½ cup fresh cilantro, finely chopped
  • 3 cloves garlic, minced or smashed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • 1 tablespoon high-smoke-point oil such as avocado or vegetable oil
  • 1 cup sweet corn fresh, frozen, or canned
  • 1 large avocado, sliced

Instructions

  • In a medium bowl, toss the sliced steak with lime juice, olive oil, two cloves of minced garlic, cumin, smoked paprika, salt, and pepper. Let marinate at room temperature for at least 20 minutes.
  • Rinse the white rice under cold water in a fine-mesh strainer until the water runs clear to remove excess starch.
  • In a saucepan, combine the rinsed rice, water, one smashed garlic clove, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the water is absorbed.
  • Once the rice is cooked, fluff it with a fork and fold in a generous handful of chopped cilantro and a fresh squeeze of lime juice. Set aside.
  • Heat a cast iron skillet over medium-high heat until it begins to smoke slightly. Add the high-smoke-point oil.
  • Add the steak bites to the skillet in a single layer, working in batches if necessary to avoid crowding. Sear undisturbed for 2-3 minutes to develop a crust, then toss and cook for another 1-2 minutes.
  • Remove the steak from the pan. In the same skillet, add the black beans and sweet corn. Sauté for 1-2 minutes to warm through and pick up the savory browned bits from the steak.
  • Assemble the bowls by placing a base of cilantro-lime rice in each bowl.
  • Top the rice with sections of seared steak, black beans, charred corn, and fresh avocado slices.
  • Garnish with extra cilantro and a final squeeze of lime juice before serving.

Notes

To ensure a perfect sear, do not crowd the pan; steaming the meat will prevent a crust from forming. Always use fresh lime juice rather than bottled for the best flavor profile. For variations, consider adding pickled red onions, cotija cheese, or a dollop of Greek yogurt mixed with lime zest.
