Chicken Wonton Tacos

Ingredients
  

  • 24 wonton wrappers
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound ground chicken
  • 2 tablespoons taco seasoning
  • ¼ cup water
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly spray a muffin tin with cooking spray.
  • Gently press each wonton wrapper into a muffin cup, forming a taco shell shape.
  • Bake for 8-10 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly.
  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onion and bell pepper and cook until softened, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Add the ground chicken to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Stir in the taco seasoning and a splash of water. Cook for another 2-3 minutes, allowing the flavors to meld together.
  • Carefully remove the crispy wonton shells from the muffin tin.
  • Fill each shell with the seasoned chicken mixture.
  • Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream or Greek yogurt, green onions, and cilantro.
  • Serve immediately.

Notes

For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the chicken filling. You can substitute ground chicken with ground turkey or shredded cooked chicken. For a vegetarian option, substitute the ground chicken with crumbled tofu or black beans. Add a drizzle of sriracha mayo for a spicy and creamy kick. Top with a scoop of guacamole or avocado for added richness and healthy fats. Mix in some corn or black beans to the chicken filling for extra texture and flavor. Use different types of cheese, such as Monterey Jack, pepper jack, or cotija.
