Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • ½ cup heavy cream optional
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley, for garnish
  • 1 cup chopped vegetables such as broccoli, spinach, or peas

Instructions
 

  • Season the Chicken: In a bowl, toss the chicken pieces with 1 tablespoon of olive oil, paprika, garlic powder, onion powder, salt, and pepper. Make sure each piece is well coated.
  • Sear the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • Sauté the Aromatics: Add another tablespoon of olive oil to the same skillet. Add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Toast the Orzo: Add the orzo pasta to the skillet and toast for 1-2 minutes, stirring constantly.
  • Add the Broth: Pour in the chicken broth and bring to a simmer.
  • Simmer and Cook: Reduce the heat to low, cover the skillet, and simmer for 10-12 minutes, or until the orzo is cooked through and the liquid is absorbed. Stir occasionally to prevent sticking.
  • Stir in the Goodness: Stir in the heavy cream (if using), Parmesan cheese, and the cooked chicken. Mix well until everything is combined and the cheese is melted.
  • Add Veggies: Stir in your chopped vegetables. Cook until they are heated through, about 2-3 minutes.
  • Garnish and Serve: Garnish with fresh parsley and serve immediately.

Notes

Don't overcook the orzo; it should be al dente. Use quality chicken broth for the best flavor. Customize the vegetables to your liking. Heavy cream is optional, but adds richness. Add red pepper flakes for spice. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding broth or water if needed.
