Equipment

  • Large non-stick skillet or cast-iron pan
  • Parchment paper or plastic wrap
  • Heavy skillet or rolling pin (for smashing)
  • Spatula
  • Cutting board
  • Chef's knife
  • Measuring spoons
  • Small bowl
  • pastry brush

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, pounded to even thickness
  • 8 small corn tortillas street taco size
  • ½ cup high-quality Caesar dressing, plus more for serving
  • ½ cup freshly grated Parmesan cheese
  • 2 cups romaine lettuce, thinly shredded
  • 2 tablespoons olive oil, plus more for the pan
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

  • Cut chicken thighs into pieces roughly the size of the tortillas. Season generously with salt, pepper, and garlic powder.
  • Lightly brush one side of each tortilla with olive oil.
  • Place a tortilla, oiled side down, on a clean work surface. Place a piece of chicken on top. Cover with parchment paper or plastic wrap. Using a heavy skillet or your palm, firmly press down to smash the chicken until it is an even, thin layer (about 1/4-inch thick) covering most of the tortilla. Peel off the paper. Repeat with remaining tortillas and chicken.
  • Heat a large non-stick skillet or cast-iron pan over medium-high heat. Add a drizzle of olive oil.
  • Carefully place one tortilla, chicken-side down, into the hot pan. Cook for 3-4 minutes, pressing down gently with a spatula, until the chicken is deeply golden and cooked through. Flip and cook the tortilla side for 30-60 seconds until lightly charred and crispy. Transfer to a plate. Repeat with remaining tortillas, adding more oil to the pan as needed.
  • As each taco comes out of the pan, immediately brush the hot chicken with a generous amount of Caesar dressing. Sprinkle with freshly grated Parmesan cheese so it begins to melt.
  • Top each taco with a handful of shredded romaine lettuce and an extra drizzle of Caesar dressing. Serve immediately.

Notes

For the best texture, do not overcrowd the pan; cook tacos in batches. Let the chicken sit at room temperature for 10 minutes before cooking to ensure even cooking. For a spicy twist, stir a minced chipotle pepper in adobo sauce into the Caesar dressing. Leftover tacos can be stored in an airtight container in the refrigerator for up to 2 days; reheat in a skillet to restore crispiness.
