Equipment

  • Large cast-iron or non-stick skillet
  • Paper towels
  • Cutting board
  • Chef's knife
  • Large mixing bowl
  • Tongs or spatula
  • Heavy-bottomed pot or second skillet (for smashing tortillas)
  • Meat thermometer (optional)
  • Measuring cups and spoons
  • Box grater (for Parmesan)

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 6 small flour or corn tortillas
  • ½ cup high-quality Caesar dressing
  • ½ cup freshly grated Parmesan cheese
  • 2 cups chopped romaine lettuce crisp inner leaves
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Optional: 1/2 cup croutons crushed or whole
  • Optional: 2 anchovy fillets minced
  • Optional: 1 lemon zest
  • Optional: 1 tsp smoked paprika
  • Optional: 4 slices bacon cooked and crumbled

Instructions

  • Pat the chicken thighs or breasts completely dry with paper towels. Season generously on both sides with salt, pepper, garlic powder, and onion powder. If using chicken breasts, pound them to an even thickness for uniform cooking.
  • Heat 1 tablespoon of olive oil in a large cast-iron or non-stick skillet over medium-high heat until shimmering. Add the chicken and cook for 5-7 minutes per side, without moving, until a deep golden-brown crust forms and the internal temperature reaches 165°F (74°C).
  • Transfer the cooked chicken to a cutting board and let it rest for 5 minutes. Then slice it into thin strips.
  • While the chicken rests, wipe out the skillet and add the remaining 1 tablespoon of olive oil over medium heat. Working in batches, place a tortilla in the pan. After about 30 seconds, flip it. Place a heavy-bottomed pot or second skillet on top of the tortilla and gently press down to 'smash' it. Cook for 1-2 minutes per side until deeply golden and rigid. Repeat with the remaining tortillas.
  • In a large bowl, toss the chopped romaine with a few tablespoons of Caesar dressing until just lightly coated. Do not overdress.
  • To assemble each taco, lay a crispy tortilla flat. Add a generous handful of dressed romaine, a few slices of seared chicken, a shower of Parmesan cheese, and a sprinkle of croutons if using. Drizzle with a little more dressing on top. Serve immediately.

Notes

For the best texture, ensure the tortillas are crisped until rigid and almost shatter when bitten. Avoid overdressing the lettuce to prevent sogginess. Letting the chicken rest is crucial for juicy meat. For a flavor boost, cook minced anchovy fillets with the chicken, add lemon zest to the dressing, or use smoked paprika in the chicken seasoning. Bacon crumbles make an excellent garnish. Leftover components can be stored separately in the refrigerator for up to 2 days; reheat tortillas in a dry skillet to restore crispness.
