Ingredients
  

  • 2 slices bread sourdough or ciabatta recommended
  • ¼ cup cooked chicken breast, shredded or sliced
  • ¼ avocado, mashed
  • 1 tablespoon lemon juice
  • ¼ cup cheddar cheese, shredded
  • ¼ cup Monterey Jack cheese, shredded
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Butter or cooking spray for grilling

Instructions
 

  • In a small bowl, mash the avocado with lemon juice, salt, and pepper. Set aside.
  • If using plain cooked chicken, season it with salt, pepper, and any other desired spices, such as garlic powder or paprika.
  • Spread mayonnaise and Dijon mustard on one slice of bread.
  • Layer with cheddar cheese, seasoned chicken, avocado mash, Monterey Jack cheese, and the other slice of bread.
  • Heat a skillet or griddle over medium heat. Butter the outside of the top slice of bread.
  • Place the sandwich in the skillet, butter-side down. Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  • Remove the sandwich from the skillet and let it cool slightly before slicing in half.
  • Serve immediately and enjoy the warm, melty goodness!

Notes

For a spicier kick, mix sriracha or chipotle powder into the mayonnaise. Add crispy bacon crumbles or chopped sun-dried tomatoes for extra flavor. Use rotisserie chicken for a quick option. Greek yogurt or avocado oil mayo can be used for a healthier twist. Ensure the avocado is ripe but firm for the best texture and taste. Don't overcook the sandwich to avoid dry chicken and burnt bread.
