Ingredients
  

  • 1 cup freshly squeezed lemon juice (from 6–8 lemons)
  • 1 cup cold water
  • ¾ cup simple syrup (or more, to taste)
  • 4 cups vanilla ice cream, slightly softened

Instructions
 

  • In a pitcher, combine the lemon juice, cold water, and simple syrup. Stir well and adjust sweetness to taste.
  • Chill the lemonade base in the refrigerator for 30 minutes for best results.
  • Let your vanilla ice cream soften at room temperature for 10–15 minutes.
  • In a blender, combine the chilled lemonade base and softened vanilla ice cream.
  • Blend until completely smooth and creamy. Avoid over-blending to maintain texture.
  • Serve immediately in glasses. Garnish with lemon wedges or mint if desired.

Notes

Use Meyer lemons for a milder flavor, and try vanilla bean ice cream for extra richness. Adjust the sweetener to your preference, and consider freezing leftovers into popsicles. Blend just until smooth to avoid melting the ice cream too much.
