Ingredients
  

  • 2 pounds potatoes, peeled and cubed Yukon Gold or Russet
  • 1 pound smoked sausage, sliced Kielbasa or Andouille
  • 4 ounces cream cheese, softened
  • ½ cup sour cream
  • ¼ cup milk or more, to adjust consistency
  • 1 ½ cups shredded cheddar cheese, divided
  • 2 tablespoons ranch seasoning or one packet
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Optional Garnishes: Chopped green onions, crumbled bacon

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Peel and cube the potatoes into bite-sized pieces.
  • Cut the smoked sausage into slices about 1/4 inch thick.
  • Place the cubed potatoes in a large pot, cover with water, and bring to a boil. Cook until the potatoes are fork-tender, about 10-15 minutes.
  • While the potatoes are boiling, sauté the sliced smoked sausage in a large skillet over medium heat until lightly browned and heated through.
  • Once the potatoes are tender, drain them well.
  • In a large bowl, combine the softened cream cheese, sour cream, milk, 1 cup of the shredded cheddar cheese, ranch seasoning, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy. If the sauce is too thick, add a little more milk until you reach your desired consistency.
  • Add the drained potatoes and sautéed sausage to the cheesy ranch sauce. Gently stir to combine, making sure the potatoes and sausage are evenly coated.
  • Pour the potato and sausage mixture into a greased 9x13 inch baking dish.
  • Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the potatoes are heated through.
  • Remove from the oven and let cool for a few minutes before garnishing with chopped green onions or crumbled bacon, if desired. Serve hot and enjoy!

Notes

Don't overcook the potatoes. Use good quality smoked sausage. Adjust the ranch seasoning to your liking. Add some veggies for an extra boost of nutrients. You can assemble the potato and sausage mixture ahead of time and store it in the refrigerator until you're ready to bake. Spice it up with diced tomatoes and green chilies. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven at 350°F (175°C) until heated through.
