Ingredients
  

  • 2 pounds potatoes (Russet, Yukon Gold, or Red), peeled and cubed
  • 1 pound smoked sausage, sliced
  • 1 packet ranch seasoning (1 ounce)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.5 cup milk or cream
  • 2 tablespoons butter, melted
  • Salt and pepper to taste
  • 0.5 cup chopped onion (optional)
  • 0.5 cup chopped bell pepper (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large bowl, combine potatoes, sausage, ranch seasoning, melted butter, milk or cream, salt, pepper, and optional onion and bell pepper.
  • Pour the mixture into the prepared baking dish.
  • Bake uncovered for 30-40 minutes or until potatoes are tender and sausage is cooked through.
  • Sprinkle shredded cheeses evenly over the top.
  • Return to oven for 5-10 more minutes, until cheese is melted and bubbly.
  • Let rest for a few minutes before serving. Garnish with chopped green onions if desired.

Notes

Parboil potatoes for faster cooking. Use high-quality sausage and freshly shredded cheese for the best flavor. Optional veggies like bell peppers or onions make great add-ins. Let it rest before serving to allow cheese to set.
