Ingredients
  

  • 5 medium potatoes, peeled and thinly sliced
  • 1 lb ground beef
  • 1 can cream of mushroom soup
  • 1 onion, chopped
  • 2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder or paprika (optional)
  • ½ cup sour cream (optional)
  • ¼ cup chopped green onions, for garnish (optional)

Instructions
 

  • Preheat oven to 375°F and grease a 9x13-inch casserole dish.
  • In a skillet over medium heat, brown ground beef with chopped onion. Drain excess fat.
  • Stir in cream of mushroom soup, salt, pepper, and optional seasonings like garlic powder or paprika.
  • Layer half of the sliced potatoes in the bottom of the prepared dish. Top with half the beef mixture. Repeat with remaining potatoes and beef.
  • Sprinkle shredded cheddar cheese evenly on top.
  • Cover with foil and bake for 50 minutes. Then remove foil and bake an additional 10–15 minutes until bubbly and golden.
  • Let casserole rest for 10 minutes before serving. Garnish with green onions if desired.

Notes

For creamier results, add a layer of sour cream between the beef and potatoes. Pre-cooking potatoes slightly helps speed up bake time and ensure tenderness.
