Equipment

  • Cutting board
  • Chef's knife
  • Measuring cups and spoons
  • Medium mixing bowl
  • Spatula or wooden spoon
  • Small spoon or piping bag with wide tip
  • Serving platter
  • Paper towels

Ingredients

  • 8 large celery stalks
  • 8 ounces cream cheese, softened
  • ⅓ cup Buffalo hot sauce e.g., Frank's RedHot
  • 1 tablespoon dry ranch seasoning mix
  • 2 cups cooked chicken, finely shredded or chopped rotisserie, roasted, or grilled
  • ½ cup crumbled blue cheese, plus extra for garnish
  • Fresh celery leaves for garnish optional
  • Extra Buffalo hot sauce for drizzling optional

Instructions

  • Rinse and dry 8 large celery stalks. Trim the ends and any tough leaves. Cut each stalk crosswise into 3-inch pieces. If the stalks are very wide, slice them lengthwise down the middle to create narrower 'boats'. Pat the pieces dry thoroughly with paper towels.
  • In a medium bowl, combine 8 ounces of softened cream cheese, 1/3 cup of Buffalo hot sauce, and 1 tablespoon of dry ranch seasoning mix. Stir until completely smooth and homogenous.
  • Fold in 2 cups of finely shredded or chopped cooked chicken until evenly coated.
  • Gently stir in 1/2 cup of crumbled blue cheese, reserving a few tablespoons for garnish.
  • Using a small spoon or a piping bag fitted with a wide tip, fill each celery piece with the Buffalo chicken mixture. Mound it slightly on top for a generous look.
  • Arrange the filled sticks on a serving platter. Sprinkle the reserved blue cheese crumbles over the top and add a few fresh celery leaves for color.
  • For the final garnish, drizzle a thin line of extra Buffalo sauce over the tops of the sticks (optional). Serve immediately, or refrigerate for up to 2 hours to allow the flavors to meld.

Notes

For best results, ensure the cream cheese is at room temperature to avoid a lumpy filling. If using fried or baked chicken, let it cool completely before mixing to prevent the cream cheese from melting. To make dairy-free, use vegan cream cheese and dairy-free ranch seasoning, and omit the blue cheese or use vegan feta. For a milder heat, swap the Buffalo sauce for a mild cayenne pepper sauce or mix it with extra cream cheese. Store leftovers in an airtight container in the refrigerator for up to 2 days.
