Ingredients
  

  • 10-12 large flour tortillas burrito size
  • 2 cups shredded cheese Cheddar, Monterey Jack, Mexican blend
  • 2 cups cooked protein ground beef, shredded chicken, carnitas, seasoned black beans
  • 1 cup salsa your favorite kind
  • ½ cup diced onions optional
  • ½ cup diced bell peppers optional
  • ¼ cup sliced olives optional
  • ½ cup corn optional
  • ¼ cup jalapenos, pickled or fresh optional
  • ¼ cup sour cream or cream cheese optional
  • 2 tablespoons melted butter or cooking spray
  • Sour cream, for serving
  • Guacamole, for serving
  • Pico de gallo, for serving
  • Queso, for serving

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  • Lay one tortilla flat on a work surface.
  • Spread a thin layer of salsa evenly over the surface, leaving a small border around the edge.
  • Sprinkle with a layer of cheese, followed by your chosen protein and any other fillings. Be careful not to overfill.
  • Fold the tortilla in half.
  • Starting at the folded edge, make small cuts (about 2 inches long) along the rounded edge, spacing them about an inch apart. These cuts will create the 'petals' of the bloom.
  • Repeat steps 2-6 with the remaining tortillas.
  • Arrange the filled and cut tortillas in a circle on the prepared baking sheet, overlapping the ends slightly to create a continuous ring. The folded edges should be facing inward, and the cut edges should be facing outward.
  • Brush the top of the tortillas with melted butter or spray lightly with cooking spray.
  • Bake for 15-20 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly. Keep a close eye on it to prevent burning.
  • Remove from the oven and let cool for a few minutes before serving.
  • Carefully transfer the Blooming Quesadilla Ring to a serving platter.
  • Arrange your favorite dips in the center of the ring.
  • Serve immediately and enjoy!

Notes

For easier folding, warm tortillas in the microwave for a few seconds. To prevent tortillas from cracking, lightly dampen them with a paper towel before filling. The ring can be assembled a few hours in advance and stored in the refrigerator, covered tightly with plastic wrap. Add a few extra minutes to the baking time if baking from chilled. Keep the baked ring warm in a low oven (200°F/95°C) or on a warming tray until serving. Consider flavor variations such as Spicy Fiesta with chorizo, BBQ Chicken with shredded chicken in BBQ sauce, or Pizza Quesadilla with pepperoni and marinara sauce.
