Equipment

  • Large skillet
  • Spoon
  • Small bowl
  • Whisk
  • Clean surface
  • Dry skillet or microwave or oven
  • Foil (optional)
  • Knife

Ingredients

  • 1 pound ground beef 80/20
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • ½ cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • Pinch of sugar optional
  • 4 large flour tortillas
  • 4 slices American cheese
  • 1 cup shredded lettuce
  • ½ cup diced onion
  • ¼ cup dill pickle slices, chopped

Instructions

  • In a large skillet over medium-high heat, brown the ground beef. Break it up with a spoon as it cooks.
  • Once the beef is browned, drain off any excess grease.
  • Add the garlic powder, onion powder, smoked paprika, salt, and pepper to the beef. Stir to combine and cook for another minute, allowing the spices to bloom.
  • Set the beef aside.
  • In a small bowl, whisk together the mayonnaise, sweet pickle relish, yellow mustard, white vinegar, garlic powder, onion powder, paprika, and sugar (if using).
  • Taste and adjust seasonings as needed.
  • Set the sauce aside.
  • Warm the tortillas in a dry skillet, microwave, or oven.
  • Lay a tortilla flat on a clean surface.
  • Spread a generous amount of special sauce evenly over the tortilla.
  • Top with 1/4 of the cooked ground beef.
  • Place a slice of cheese over the beef.
  • Sprinkle with 1/4 of the shredded lettuce, diced onion, and chopped pickles.
  • Fold in the sides of the tortilla and then roll it up tightly, starting from the bottom.
  • Heat a skillet over medium heat.
  • Place the assembled wraps in the skillet, seam-side down.
  • Cook for 2-3 minutes per side, or until the tortillas are golden brown and slightly crispy.
  • Cut the wraps in half (optional).
  • Serve immediately and enjoy.

Notes

For a spicier wrap, add a pinch of cayenne pepper to the beef or hot sauce to the special sauce. Customize with diced tomatoes, bell peppers, or avocado. Try cheddar, pepper jack, or Swiss cheese instead of American. Romaine or baby spinach can be used instead of shredded lettuce. Use low-carb tortillas or lettuce wraps for a healthier option. Wraps can be stored in the refrigerator for up to 24 hours, but are best served immediately.
