Ingredients
  

  • 4 cups chicken broth or vegetable broth
  • 2 cups water
  • 2 tablespoons gochujang Korean chili paste
  • 1 tablespoon gochugaru Korean chili powder
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin Korean rice wine
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • ½ inch ginger, grated
  • ½ teaspoon sugar
  • Pinch of black pepper
  • 2 packages ramen noodles Shin Ramyun recommended
  • ½ cup thinly sliced cooked pork belly or bacon
  • ½ cup sliced kimchi
  • ¼ cup chopped green onions
  • 1 soft-boiled egg, halved
  • 1 sheet nori seaweed, cut into strips
  • Sesame seeds, for garnish
  • Optional: bean sprouts
  • Optional: mushrooms
  • Optional: tofu
  • Optional: fish cakes

Instructions
 

  • In a medium saucepan or pot, combine the chicken broth, water, gochujang, gochugaru, soy sauce, mirin, sesame oil, garlic, ginger, sugar, and black pepper.
  • Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for at least 10 minutes (or longer for richer flavor).
  • While the broth is simmering, cook the ramen noodles according to the package directions until al dente. Drain well.
  • Divide the cooked ramen noodles between two bowls.
  • Ladle the hot broth over the noodles.
  • Arrange the pork belly, kimchi, green onions, soft-boiled egg, and nori seaweed on top of the noodles.
  • Sprinkle with sesame seeds for a final touch.
  • Serve immediately and enjoy!

Notes

Adjust the spice level by adding more or less gochujang and gochugaru. For a vegetarian/vegan option, use vegetable broth and substitute the pork belly with tofu or mushrooms. Ensure your kimchi is vegan-friendly. For gluten-free, use gluten-free ramen noodles and tamari instead of soy sauce. Customize the toppings with your favorite proteins and vegetables.
