Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • ¼ cup olive oil
  • ¼ cup soy sauce or coconut aminos
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes optional
  • 1 bell pepper, cut into 1-inch pieces optional
  • 1 red onion, cut into 1-inch pieces optional
  • 1 zucchini, cut into 1/2-inch thick slices optional
  • 1 cup cherry tomatoes optional

Instructions
 

  • If using wooden skewers, soak them in water for at least 30 minutes.
  • Cut the chicken breasts into uniform 1-inch cubes.
  • Chop your chosen vegetables into similar-sized pieces.
  • In a medium bowl, whisk together the olive oil, soy sauce (or coconut aminos), Dijon mustard, minced garlic, lemon juice, smoked paprika, onion powder, black pepper, and red pepper flakes (if using).
  • Place the chicken cubes in a ziplock bag or a bowl.
  • Pour the marinade over the chicken, ensuring every piece is well coated.
  • Seal the bag or cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  • Thread the marinated chicken onto the skewers, alternating with your chosen vegetables (if using). Leave a little space between each piece for even cooking.
  • To grill: Preheat your grill to medium heat (around 350-400°F or 175-200°C). Place the skewers on the preheated grill. Cook for 8-12 minutes, turning occasionally, until the chicken is cooked through and has a slight char. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
  • To bake: Preheat your oven to 400°F (200°C). Place the skewers on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is cooked through. Check for that 165°F (74°C) internal temperature.
  • To air fry: Preheat your air fryer to 375°F (190°C) if your model requires it. Place the skewers in the air fryer basket in a single layer (you may need to cook them in batches). Cook for 10-15 minutes, flipping halfway through, until the chicken is cooked through.
  • Let the skewers rest for a few minutes before serving.
  • Serve hot and enjoy! They're fantastic with a side salad, cauliflower rice, or roasted vegetables.
