Ingredients
  

  • 1.5 lbs ground chicken mix of dark and white meat preferred
  • ½ cup breadcrumbs panko or regular
  • ¼ cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons olive oil or vegetable oil
  • Burger buns brioche or sesame seed

  • Burger sauce mayo, ketchup, mustard, BBQ sauce, or aioli

Instructions
 

  • In a large bowl, gently combine the ground chicken, breadcrumbs, chopped onion, minced garlic, egg, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using).
  • Season generously with salt and freshly ground black pepper.
  • Use your hands (or a spoon) to mix everything together until just combined. Be careful not to overmix.
  • Divide the chicken mixture into 4-6 equal portions.
  • Gently shape each portion into a patty about 3/4 inch thick. Use your thumb to make a small indentation in the center of each patty.
  • Place the patties on a plate or baking sheet lined with parchment paper.
  • Cover the patties with plastic wrap and refrigerate for at least 30 minutes.
  • Heat the olive oil or vegetable oil in a large skillet over medium heat.
  • Carefully place the chicken burgers in the hot skillet, making sure not to overcrowd the pan. Cook in batches if necessary.
  • Cook for about 5-7 minutes per side, or until the burgers are cooked through and the internal temperature reaches 165°F (74°C). Use a meat thermometer to be sure.
  • If adding cheese, place a slice on each burger during the last minute of cooking, allowing it to melt.
  • While the burgers are cooking, toast the burger buns.
  • Spread your favorite burger sauce on the top and bottom buns.
  • Layer on the lettuce, tomato, onion, pickles, and any other toppings you desire.
  • Carefully place the cooked chicken burger on the bottom bun and top with the other half of the bun.
  • Serve immediately and enjoy!

Notes

Don't overmix the chicken mixture to avoid tough burgers. Chilling the patties helps them hold their shape. Use a meat thermometer to ensure the burgers are cooked through. Don't press down on the burgers while they're cooking. Let the burgers rest for a few minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a skillet, microwave, or oven.
