Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs, lightly beaten
  • 1 ½ cups shredded cheddar cheese, divided

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the milk, melted butter, and eggs.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix!
  • Stir in the creamed corn, drained whole kernel corn, and 1 cup of the shredded cheddar cheese. Reserve the remaining 1/2 cup of cheese for topping.
  • Pour the mixture into the prepared baking dish and sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.
  • Bake for 45-50 minutes, or until the casserole is golden brown and set in the center. A toothpick inserted into the center should come out clean.
  • Let the casserole cool for about 10-15 minutes before serving.

Notes

For a spicy kick, add a pinch of cayenne pepper or chopped jalapeños. You can also experiment with different types of cheese like Monterey Jack or Pepper Jack. Add cooked bacon, ham, or sausage for a heartier casserole. To store, cover tightly with plastic wrap and store in the refrigerator for up to 24 hours before baking, or store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or the entire casserole in the oven at 350°F (175°C).
