Ingredients
  

  • 2 lbs cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • ½ cup mayonnaise
  • ¼ cup chicken broth
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt to taste
  • Pepper to taste
  • 1 cup broccoli florets, steamed or roasted
  • ½ cup chopped onion
  • ½ cup sliced mushrooms
  • 2 cups shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped bacon, cooked crispy optional
  • ¼ cup chopped green onions, for garnish optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine the softened cream cheese, heavy cream, mayonnaise, and chicken broth.
  • Whisk everything together until it's smooth and creamy.
  • Add the garlic powder, onion powder, salt, and pepper. Taste and adjust seasonings as needed.
  • Add the shredded chicken, steamed broccoli, chopped onion, and sliced mushrooms to the cream cheese mixture.
  • Stir everything together until it's well combined.
  • Pour the mixture into the prepared baking dish.
  • Sprinkle the shredded cheddar cheese and Parmesan cheese evenly over the top of the casserole.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
  • If you're adding bacon, sprinkle it over the top during the last 5 minutes of baking.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Garnish with chopped green onions, if desired.

Notes

Feel free to experiment with different types of chicken and low-carb vegetables. You can assemble the casserole ahead of time and store it in the refrigerator for up to 24 hours before baking. Chicken casserole freezes beautifully for up to 3 months.
