Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 ripe avocados
  • ¼ cup red onion, finely chopped
  • ¼ cup cilantro, chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 4 slices of bread sourdough, whole wheat, or multigrain
  • 4 slices of cheese Monterey Jack, provolone, or cheddar
  • 2 tablespoons butter, softened

Instructions
 

  • Preheat your grill or skillet to medium-high heat.
  • In a small bowl, combine olive oil, paprika, garlic powder, salt, and pepper.
  • Rub the mixture all over the chicken breasts.
  • Grill or cook the chicken for about 6-8 minutes per side, or until fully cooked and no longer pink inside. An instant-read thermometer should register 165°F (74°C).
  • Let the chicken rest for 5 minutes, then slice it thinly.
  • In a medium bowl, mash the avocados with a fork.
  • Stir in the red onion, cilantro, and lime juice.
  • Season with salt and pepper to taste.
  • Butter one side of each slice of bread.
  • Place two slices of bread, butter-side down, in a skillet over medium heat.
  • Top each slice with half of the sliced chicken, followed by half of the avocado mixture.
  • Add two slices of cheese to each sandwich.
  • Top with the remaining slices of bread, butter-side up.
  • Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  • Slice in half and serve immediately.

Notes

For the best results, use ripe but not mushy avocados. Lime juice prevents browning. Use a meat thermometer to ensure the chicken is cooked to 165°F (74°C) for optimal tenderness. Feel free to experiment with different types of cheese and bread to customize the sandwich to your liking. Add jalapeños or hot sauce for a spicy kick.
