Equipment

  • Large skillet
  • Spoon
  • Measuring cups
  • Measuring spoons
  • Spatula
  • Knife
  • Cutting board

Ingredients

  • 1 pound ground beef
  • ½ cup chopped onion
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 8 slices bread
  • 4 tablespoons butter, softened
  • 4-8 slices cheese cheddar, provolone, or mozzarella
  • Optional: sliced tomatoes
  • Optional: lettuce
  • Optional: pickles

Instructions

  • In a large skillet, brown the ground beef over medium-high heat, breaking it up with a spoon.
  • Drain off any excess grease.
  • Add the chopped onion to the skillet and cook until softened, about 3-5 minutes.
  • Stir in the garlic powder, smoked paprika, black pepper, and salt.
  • Pour in the beef broth and Worcestershire sauce. Bring to a simmer and cook for another 5 minutes, allowing the sauce to thicken slightly.
  • Spread softened butter on one side of each slice of bread.
  • Place four slices of bread, butter-side down, in a large skillet over medium heat.
  • Top each slice of bread with half of the ground beef mixture.
  • Add cheese slices over the ground beef.
  • Top with the remaining slices of bread, butter-side up.
  • Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Gently press down on the sandwiches with a spatula to help the cheese melt evenly.
  • Remove from the skillet and slice in half.
  • Serve immediately and enjoy!

Notes

Don't overcrowd the skillet; cook the melts in batches if necessary to ensure even browning. Covering the skillet with a lid for the last minute or two of cooking helps the cheese melt faster. Get creative with toppings like sliced tomatoes, lettuce, or pickles. Add a pinch of red pepper flakes for heat. The ground beef mixture can be made ahead and stored for up to 3 days. Leftovers can be stored in the refrigerator for up to 2 days and reheated, though the bread may become slightly soggy. Variations: Pizza Melt (pizza sauce, pepperoni, mozzarella), BBQ Melt (BBQ sauce, crispy fried onions), Spicy Jalapeño Melt (diced jalapeños, pepper jack cheese), Mushroom and Swiss Melt (sautéed mushrooms and onions, Swiss cheese).
