Ingredients
  

  • 8 boneless, skinless chicken thighs about 2 pounds
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional, for extra heat

Instructions
 

  • In a medium bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using).
  • Place the chicken thighs in a large resealable bag or a shallow dish.
  • Pour the marinade over the chicken, making sure to coat each piece evenly.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
  • Preheat your grill to medium-high heat or heat a grill pan on the stovetop over medium-high heat.
  • Remove the chicken thighs from the marinade and discard the marinade.
  • Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). If using a grill pan, cook for a similar amount of time, making sure to get a nice sear on each side.
  • Let the chicken rest for a few minutes before serving.

Notes

Don't overcrowd the grill or pan. Use a meat thermometer to ensure the chicken is cooked through. Adjust the seasoning to your liking. Always marinate chicken in the refrigerator. You can marinate the chicken thighs up to 4 hours in advance. Cooked chicken thighs can be stored in the refrigerator for up to 3-4 days. Variations: Lemon Herb (Add lemon zest, fresh thyme, and rosemary to the marinade), Spicy Chipotle (Add chipotle powder, adobo sauce, and a pinch of cumin to the marinade), Asian-Inspired (Use soy sauce, ginger, garlic, and a touch of sesame oil in the marinade).
