Ingredients
  

  • 1 pound flank steak or sirloin steak, thinly sliced against the grain
  • 1 tablespoon soy sauce for beef
  • 1 tablespoon cornstarch for beef
  • 1 teaspoon sesame oil for beef
  • ½ teaspoon ground ginger for beef
  • ¼ teaspoon garlic powder for beef
  • ¼ cup soy sauce for sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon oyster sauce optional
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil for sauce
  • 1 teaspoon cornstarch for sauce
  • ½ cup beef broth or water
  • 1 clove garlic, minced
  • ½ teaspoon ginger, grated
  • Pinch of red pepper flakes optional
  • 1 tablespoon vegetable oil
  • 1 head of broccoli, cut into florets
  • 2 packages ramen noodles, seasoning packets discarded
  • Sesame seeds optional garnish
  • Sliced green onions optional garnish

Instructions
 

  • In a medium bowl, combine the thinly sliced beef with 1 tablespoon soy sauce, 1 tablespoon cornstarch, 1 teaspoon sesame oil, 1/2 teaspoon ground ginger, and 1/4 teaspoon garlic powder. Toss to coat well and let marinate for at least 15 minutes (or up to 30 minutes in the refrigerator).
  • In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon oyster sauce (if using), 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon cornstarch, 1/2 cup beef broth (or water), minced garlic, grated ginger, and red pepper flakes (if using). Set aside.
  • Cook the ramen noodles according to package directions, but slightly undercook them. Drain well and set aside.
  • Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat.
  • Add the marinated beef and stir-fry for 2-3 minutes, or until browned. Remove the beef from the skillet and set aside.
  • Add the broccoli florets to the skillet and stir-fry for 3-4 minutes, or until crisp-tender. If the pan seems dry, add a tablespoon of water.
  • Pour the sauce into the skillet and bring to a simmer, stirring constantly until the sauce thickens (about 1-2 minutes).
  • Add the cooked beef and ramen noodles to the skillet.
  • Toss everything together until well combined and heated through.
  • Serve immediately, garnished with sesame seeds and sliced green onions, if desired.

Notes

Prep all ingredients in advance as stir-fries cook quickly. Use high heat to sear the beef and keep the broccoli crisp-tender. Avoid overcrowding the pan; cook beef in batches if necessary. Adjust the sauce to your liking by adding more soy sauce, brown sugar, or red pepper flakes. Feel free to add other vegetables like bell peppers or carrots. For extra flavor, add a teaspoon of chili garlic sauce. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or skillet. For variations, try adding sriracha or gochujang for a spicy kick, peanut butter for a nutty flavor, or substitute the beef with tofu or mushrooms for a vegetarian option.
