Equipment

  • Cutting board
  • Knife
  • Medium saucepan
  • Whisk
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Serving dish
  • Optional: Baking dish
  • Optional: Oven

Ingredients

  • 1 pound Smoked Sausage Kielbasa or Andouille preferred
  • 1 cup BBQ Sauce tangy, slightly sweet variety recommended
  • ½ cup Brown Sugar
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Worcestershire Sauce
  • Optional: Red Pepper Flakes to taste
  • Optional: Sesame Seeds or Chopped Parsley for garnish

Instructions

  • Cut the smoked sausage into bite-sized pieces, about 1-inch thick.
  • In a medium saucepan, combine the BBQ sauce, brown sugar, apple cider vinegar, and Worcestershire sauce.
  • Whisk everything together until the brown sugar is dissolved.
  • Place the saucepan over medium heat and bring the sauce to a simmer.
  • Reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, allowing the flavors to meld and the sauce to thicken slightly.
  • Add the sausage pieces to the saucepan and stir to coat them evenly with the BBQ sauce mixture.
  • Continue to simmer the sausage bites in the sauce for about 10-15 minutes, stirring occasionally, until the sauce thickens and becomes sticky, clinging to the sausage pieces. Keep an eye on it and stir frequently to prevent sticking or burning.
  • Optional: For even more caramelization, transfer the sausage bites and sauce to a baking dish and bake in a preheated oven at 350°F (175°C) for about 10-15 minutes.
  • Remove the sausage bites from the heat and transfer them to a serving dish.
  • Garnish with sesame seeds or chopped parsley, if desired.
  • Serve warm and enjoy!

Notes

For best results, choose a high-quality smoked sausage. Adjust the amount of brown sugar and red pepper flakes to your preferred level of sweetness and spiciness. These sausage bites can be made ahead of time and stored in the refrigerator for up to 2 days; simply reheat before serving. To prevent sticking during simmering, stir frequently and consider adding a tablespoon of water if the sauce becomes too thick. Serve with toothpicks for easy serving.
