Ingredients
  

  • 2 medium sweet potatoes, peeled and cubed

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the cubed sweet potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Make sure they're evenly coated.
  • Spread the sweet potatoes in a single layer on a baking sheet.
  • Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  • While the sweet potatoes are roasting, heat 1 tablespoon olive oil in a large skillet over medium heat.
  • Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
  • Stir in the BBQ sauce, garlic powder, and onion powder.
  • Simmer for a few minutes, allowing the sauce to thicken slightly and coat the chicken evenly.
  • Divide the roasted sweet potatoes evenly between two bowls.
  • Top with the BBQ chicken.
