Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • ¼ cup olive oil, divided
  • Salt and pepper to taste
  • ½ teaspoon garlic powder optional
  • ½ teaspoon onion powder optional
  • ½ teaspoon smoked paprika optional
  • 1 cup BBQ sauce, your favorite
  • 2 large sweet potatoes, peeled and cubed
  • ¼ teaspoon cinnamon optional
  • ¼ teaspoon chili powder optional
  • ¼ teaspoon smoked paprika optional
  • ½ cup black beans, rinsed and drained
  • ½ cup corn, fresh, frozen, or canned
  • ¼ cup red onion, thinly sliced
  • 1 avocado, diced
  • ¼ cup cilantro, chopped
  • ¼ cup shredded cheddar cheese
  • ¼ cup Greek yogurt or sour cream
  • 2 green onions, sliced
  • Hot sauce to taste optional
  • 2 lime wedges

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the sweet potatoes into roughly ½-inch pieces.
  • Place the cubed sweet potatoes in a large bowl and drizzle with 2 tablespoons of olive oil. Toss to coat evenly.
  • Season with salt, pepper, and any optional spices you like (cinnamon, chili powder, smoked paprika).
  • Spread the sweet potatoes in a single layer on a baking sheet.
  • Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  • Cut the chicken breasts into bite-sized pieces.
  • Heat a drizzle of olive oil in a large skillet over medium heat.
  • Add the chicken to the skillet and season with salt, pepper, and any optional spices (garlic powder, onion powder, smoked paprika).
  • Cook until the chicken is cooked through, about 5-7 minutes. The internal temperature should reach 165°F (74°C).
  • Pour your favorite BBQ sauce over the chicken and toss to coat evenly.
  • Simmer for a few minutes, allowing the sauce to thicken slightly.
  • Divide the roasted sweet potatoes evenly among bowls.
  • Top with the BBQ chicken.
  • Add your favorite toppings: black beans, corn, red onion, avocado, cilantro, shredded cheese, Greek yogurt or sour cream, green onions, hot sauce, and lime wedges.
  • Drizzle with a little extra BBQ sauce or a dollop of Greek yogurt or sour cream.
  • Garnish with cilantro and a lime wedge.

Notes

For best results, don't overcrowd the sweet potatoes on the baking sheet. Use two baking sheets if necessary. Use a meat thermometer to ensure the chicken is cooked through. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven. Add fresh toppings just before serving. To meal prep, roast the sweet potatoes and cook the chicken ahead of time and store them separately in the refrigerator.
