Apple Fritter Bites: Your New Weekend Obsession?

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ cup granulated sugar
  • 1 large egg
  • ¾ cup milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • vegetable oil, for frying
  • 2 cups powdered sugar
  • ¼ cup milk (for glaze)
  • ½ tsp vanilla extract (for glaze)
  • 1 pinch salt (for glaze)

Instructions
 

  • In a large bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and granulated sugar.
  • In a separate bowl, whisk egg, milk, melted butter, and vanilla extract until well combined.
  • Stir wet ingredients into dry mixture until just combined. Do not overmix.
  • Fold in diced apples gently.
  • Heat about 2 inches of oil in a heavy pot to 350°F (175°C). Use a candy thermometer to monitor temperature.
  • Drop spoonfuls of batter into hot oil, frying 2–3 minutes per side until golden brown. Fry in batches.
  • Remove bites with a slotted spoon. Drain on paper towels over a wire rack.
  • In a medium bowl, whisk together glaze ingredients: powdered sugar, milk, vanilla, and salt.
  • Dip each fritter bite into the glaze. Set back on rack to let glaze set.
  • Serve warm or at room temperature and enjoy!

Notes

Use a candy thermometer to monitor oil temperature for perfect frying. For extra flavor, add a pinch of cloves or allspice to the batter. Best served fresh but can be stored for up to 2 days. Not freezer-friendly due to glaze texture.
