Ingredients
  

  • 3 cups cooked and shredded chicken
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • 2 cups shredded cheddar cheese, divided
  • 1 sleeve Ritz crackers, crushed
  • ½ cup melted butter

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, mayonnaise, green chilies, garlic powder, onion powder, salt, and pepper.
  • Stir until everything is well combined.
  • Add 1 cup of the shredded cheddar cheese to the chicken mixture and stir to incorporate.
  • Pour the chicken mixture into the prepared baking dish, spreading it evenly.
  • Sprinkle the remaining 1 cup of shredded cheddar cheese over the chicken mixture.
  • In a medium bowl, combine the crushed Ritz crackers and melted butter. Mix well until the crackers are evenly coated.
  • Sprinkle the buttered cracker mixture evenly over the cheese layer.
  • Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through, the cheese is melted and bubbly, and the cracker topping is golden brown.
  • Let the casserole stand for 5-10 minutes before serving.

Notes

For a spicier kick, add red pepper flakes or use hot diced green chilies. You can assemble the casserole ahead of time and refrigerate for up to 24 hours before baking; add a few extra minutes to the baking time. If the mixture is too thick, add a splash of chicken broth or milk. For a less intense cracker flavor, use half the amount of Ritz crackers and mix them with plain breadcrumbs. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
