Ingredients
  

  • 8 ounces cream cheese, softened
  • 4 ounces mozzarella cheese, shredded
  • ½ cup almond flour, finely ground
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 8 ounces corned beef, thinly sliced
  • 1 cup sauerkraut, drained and squeezed dry
  • 4 ounces Swiss cheese, sliced
  • 2-3 tablespoons sugar-free Thousand Island dressing
  • Everything bagel seasoning, for topping optional
  • Chopped parsley, for garnish optional
  • Almond flour, for dusting optional

Instructions
 

  • In a microwave-safe bowl, combine the cream cheese and mozzarella cheese. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
  • In a separate bowl, whisk together the almond flour, garlic powder, onion powder, salt, and pepper.
  • Add the dry ingredients and the egg to the melted cheese mixture. Stir until a dough forms.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Place the chilled dough between two sheets of parchment paper. Roll it out into a large rectangle, about 1/4 inch thick.
  • Carefully peel off the top sheet of parchment paper. Spread the Thousand Island dressing evenly over the dough rectangle.
  • Layer the corned beef, sauerkraut, and Swiss cheese slices evenly over the dressing-covered dough.
  • Starting from one long side, carefully roll up the dough into a log.
  • Using a sharp knife, slice the log into 1-inch thick roll-ups.
  • Place the roll-ups, cut-side up, on the prepared baking sheet.
  • Bake for 15-20 minutes, or until the roll-ups are golden brown and the cheese is melted and bubbly.
  • Let the roll-ups cool slightly on the baking sheet before serving. Garnish with everything bagel seasoning and chopped parsley, if desired.

Notes

Draining the sauerkraut is key to prevent soggy roll-ups. Don't overbake to avoid a dry dough. You can assemble the roll-ups ahead of time and store them in the refrigerator until ready to bake, adding a few extra minutes to the baking time. For a spicy kick, add red pepper flakes to the filling or hot sauce to the dressing. Experiment with cheeses like Gruyere or Provolone. Using high-quality, thinly sliced corned beef enhances the flavor. Consider swapping the corned beef for pastrami or turkey, adding chopped onions or green bell peppers, or using Russian dressing or creamy mustard instead of Thousand Island.
