Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce your favorite brand!
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • Optional: Jalapeños
  • Optional: Pineapple chunks
  • Optional: Ranch dressing

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut the chicken breasts into 1-inch cubes.
  • In a large bowl, toss the chicken with olive oil, BBQ sauce, smoked paprika, garlic powder, salt, and pepper until well coated.
  • Spread the chicken in a single layer on a baking sheet.
  • Bake for 20-25 minutes, or until the chicken is cooked through and no longer pink inside.
  • While the chicken is baking, preheat your broiler.
  • Place the flatbreads on a baking sheet.
  • Sprinkle each flatbread with mozzarella and cheddar cheese.
  • Top with the cooked BBQ chicken and red onion.
  • Broil for 2-3 minutes, or until the cheese is melted and bubbly, keeping a close eye to prevent burning.
  • Remove the flatbreads from the oven and let them cool slightly.
  • Sprinkle with fresh cilantro.
  • Slice and serve immediately.
  • Optional: Drizzle with ranch dressing or add your favorite toppings!

Notes

For best results, use a high-quality BBQ sauce and don't overcrowd the baking sheet when cooking the chicken. Be careful when broiling the flatbreads, as they can burn quickly. Cooked chicken can be stored in the refrigerator for up to 3 days. Get creative with toppings like pineapple, jalapeños, bell peppers, or bacon. To really boost the protein content, use high-protein flatbreads.
