Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • ½ cup Panko breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • Olive oil spray

Instructions
 

  • If chicken breasts are thick, pound them to an even thickness (about 1/2 inch) using a meat mallet.
  • Pat the chicken breasts dry with paper towels.
  • In a shallow dish, combine Parmesan cheese, Panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  • In a separate shallow dish, beat the eggs until smooth.
  • Dip each chicken breast into the beaten eggs, ensuring it's fully coated.
  • Immediately transfer the egg-coated chicken to the Parmesan mixture. Press firmly to coat both sides evenly.
  • Preheat your air fryer to 375°F (190°C) for 5 minutes.
  • Lightly spray the air fryer basket with olive oil spray.
  • Place the chicken breasts in the air fryer basket in a single layer, ensuring they are not overlapping. Cook in batches if necessary.
  • Air fry for 10-12 minutes, then flip the chicken and cook for another 5-7 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the air fryer and let it rest for a few minutes before serving.
  • Garnish with fresh parsley, if desired.

Don't overcrowd the air fryer basket. Use a meat thermometer to ensure the chicken is cooked to a safe internal temperature of 165°F (74°C). Cooking times may vary depending on your air fryer model and the thickness of the chicken. Store leftover chicken in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer at 350°F (175°C) for 3-5 minutes, or until heated through.
