Ingredients
  

  • 6 medium apples Granny Smith, Honeycrisp, or a combination
  • ¼ cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg optional
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • ¼ cup water
  • 12 small flour tortillas street taco size
  • 2 tablespoons melted butter
  • Cinnamon sugar for sprinkling

Instructions
 

  • Prepare the Apple Pie Filling: In a large saucepan, combine the diced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg (if using), butter, lemon juice, and water.
  • Cook the Filling: Cook over medium heat, stirring occasionally, until the apples are tender and the filling has thickened. This should take about 10-15 minutes. The apples should be soft but not mushy.
  • Cool the Filling: Remove the saucepan from the heat and let the apple pie filling cool slightly. This will prevent the tortillas from becoming soggy.
  • Preheat Your Air Fryer: Preheat your air fryer to 375°F (190°C).
  • Assemble the Taquitos: Warm the tortillas slightly. You can warm them in the microwave for a few seconds or in a dry skillet over low heat.
  • Fill the Tortillas: Place about 2-3 tablespoons of apple pie filling in the center of each tortilla. Don't overfill.
  • Roll the Taquitos: Tightly roll up each tortilla, starting from one end and tucking in the sides as you go. Secure the roll with a toothpick if needed.
  • Brush with Butter: Brush the rolled taquitos with melted butter.
  • Sprinkle with Cinnamon Sugar: Sprinkle the buttered taquitos with cinnamon sugar.
  • Air Fry the Taquitos: Place the taquitos in the preheated air fryer basket in a single layer. You may need to cook them in batches, depending on the size of your air fryer.
  • Cook Until Golden Brown: Air fry for 5-7 minutes, or until the taquitos are golden brown and crispy. Keep a close eye on them to prevent burning.
