- 2 pounds boneless, skinless chicken breasts
Place the chicken breasts in a single layer at the bottom of the slow cooker.
Sprinkle the taco seasoning evenly over the chicken, then pour the entire jar of salsa on top.
Add the drained can of corn over the salsa. Do not stir the ingredients.
Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. The chicken should be fully cooked and tender.
Once cooked, use two forks to shred the chicken directly inside the slow cooker, mixing it with the sauce and juices.
Cut the softened cream cheese into cubes and dot them over the shredded chicken. Place the lid back on for 10-15 minutes to allow the cream cheese to melt completely.
Remove the lid and stir everything together until the sauce is smooth, creamy, and fully combined. Serve immediately.
Variations & Tips:
- Protein Swap: Boneless, skinless chicken thighs can be used for an even juicier result.
- Salsa Swap: Use salsa verde for a tangier, tomatillo-based flavor.
- Creaminess Swap: If you don't have cream cheese, stir in 1 cup of sour cream or Greek yogurt at the very end, after the heat is off.
- Add-Ins: A can of drained and rinsed black beans can be added with the corn for extra fiber and heartiness.
- Flavor Boosts: For a deeper flavor, sauté a diced onion and bell pepper and add them to the pot first. Stir in a squeeze of fresh lime juice and a handful of chopped cilantro at the end for brightness.
Important Pitfalls to Avoid:
- Do not add the cream cheese at the beginning of the cooking process, as it can curdle and create a grainy texture. Always add it at the end.
- Be sure to drain the canned corn thoroughly to prevent the sauce from becoming watery.
- Avoid overcooking, especially on high, as chicken breasts can become dry. Stick to the recommended timeframes.
